White Teas
White tea is produced quite differently from green or black tea. Only the buds and the two leaves next to the buds are hand-picked and used for white tea. These tea leaves are light green and grey and have a very light flavor.
Brewing instructions:
Use 1 to 1.5 teaspoons of tea per cup. Add water that is just under boiling, ideally 180*f. Allow tea to steep for 3 minutes. These tea leaves do not have to be removed from your pot or cup, as they will sink.
If steeping tea directly in your cup, you can continue to add water to the tea leaves approximately 3 times. This is a light-flavored tea, but the goodness of white tea can be extracted several times from the leaves.
